Fish molecule (Julie Andrieu)
Here’s a dish that I liked even though I am not a fish. This recipe comes from Julie Andrieu book I got for Christmas: “Julie Kitchen … In the world you”.
For 6 people, you will need:
- 1.2 kg of fish fillet
- 1 tbsp turmeric salt
- 1 lime 1 large onion 1 large tomato
- 8 green peppers
- 2 pieces of ginger 3cm
- 5 cloves garlic 1 can
- 50cl coconut milk
- 4 tbsp oil
- 10 sheets curry (optional)
- 4 cardamom pods
3 peppercorns 2 cloves
Cut fish fillets into chunks.
In a dish, mix half the turmeric, salt, lime juice and a little water. Add fish and marinate overnight.
Peel and chop onion. Crush tomatoes. Chop the chilies (we found not so we took the peppers), then peel and ginger and garlic.
In a Dutch oven, brown the onion made in a little oil. Add the tomato, garlic, chili, pepper, curry leaves, cloves, cardamom crushed ginger and remaining turmeric.
salt and simmer 10 minutes.
Add coconut milk and let cook about 10 minutes, until milk has reduced by half.
Add fish and cook for 10 minutes.
Serve with white rice fragrant us it was jasmine.
It was very kind, gentle and sweet for the fish;)
